According to the FDA’s Code of Federal Regulations 21 CFR Part 133, cheese products can legally include reconstituted milk, stabilizers, and emulsifiers - so long as they meet the “standard of identity.” But that standard doesn’t guarantee purity. It guarantees compliance.


And it’s not just dairy. From bread to sauces to frozen meals, natural ingredients are being replaced by lab-engineered fillers. Why? Because shelf-stable means scalable. And scalable means profitable.
